Shiitake is rich in bioactive molecules, micro and macronutrients, minerals, amino acids, vitamins, enzymes, fibers and secondary metabolites. Among the amino acids there are good quantities of glutamic acid, also called "brain food", a nutrient for the brain, which promotes the production of neurotransmitters and the transport of potassium at the brain level. It contains high levels of polysaccharides (betaglucans) including Lentinan, a branched betaglucan (β 1-3 β 1-6) which has highlighted important immunomodulation properties. A particularly effective substance contained in Shiitake is eritadenine, considered the most important bioactive component responsible for lowering cholesterol levels.
